If champagne is served to celebrate important moments in life, then beer celebrates the everyday joy of living.
In the goblet it is an intense copper colour, enlivened by a fine perlage and a cap of light, evanescent foam in a veiled white shade. On the nose, evident hints of pastry and candied panettone, made pleasantly fresh by a balsamic note of beer vinegar, delicate and cereal scented.
The first sip surprises with its cleanliness and complexity of aromas. The acetic note is immediately accompanied by sweet hints of dry pastry and malt. At the end, to complete the journey, there is a perfect and clean bitter, slightly tannic and woody nuance, which can be traced back to the barrels in which the malt vinegar has been aged for a long time.
In order to be defined as Trappist, beer must be brewed within an abbey, by monks or under their direct control. The proposal, the choice of production processes and the commercial orientation must, of course, depend on the monastic community. The economic purpose of beer production must be directed towards the subsistence of the monks and charity and not financial profit. Fourteen Trappist abbeys in the world produce beer.
